Black bean and fusilli

Tonight for dinner I tried out an easy quick dish, black beans and fusilli. This is the original recipe...

1 (8-ounce) package fusilli or gemelli pasta
1 tablespoon olive oil
1 onion, chopped
1 (15-ounce) can black beans, drained
3/4 cup thinly sliced oil-packed sun dried tomatoes
1 cup feta cheese, crumbled

In large saucepan, bring salted water to a boil. Cook pasta according to package directions until al dente.
Meanwhile, in a large skillet, cook onion in olive oil over medium heat until tender, about 6 minutes. Add drained and rinsed beans. Drain pasta and add to skillet along with 1/3 cup cooking liquid. Add tomatoes and simmer for 3 minutes.

Add cheese and serve immediately.

I didn't use onions and I couldn't find sun dried tomatoes in oil. So instead after I mixed everything together I topped it with a little olive oil. It turned out good! The feta was enough to add flavor for me... But then again I love feta : )

Super easy, tasty dish and I am able to cook it in our little kitchenette.

Homemade bread

Back in September Franks mom gave me a bread machine she didn't use. I never got around to using it while I was home, but yesterday I finally put it to use! I mostly wanted to see how it worked and if I want to ship it out when we leave.

I wanted to find a recipe that had limited ingredients so I didn't have to spend much money. I also don't remember the recipe that I used to use since it was from the book of my last bread machine. I figure what is a better place to look for a limited ingredient recipe than 100 days of real food (since I'm on my phone I can't link her site up). I used her whole wheat recipe, I'm hoping to try the cinnamon raisin bread this coming week : )

Pismo Beach

Last Saturday Frank and I decided to go on a day trip out to the coast. We decided to check out Pismo Beach since it was closest and looked dog friendly. I like to be smart and check the weather for where we are going so we can dress accordingly. The weather said it would be 60 and sunny. We dressed somewhat warm but not too bundled up. When we got there weatherbug said it was 54 but it felt more like 70!

We walked around for a bit then decided to eat. There was a restraunt that catered to dogs so we thought that'd be nice. When we put our name on the list the lady said it would be about a 15 minute wait. Well it ended up being more like 30 minutes and since my blood sugar was getting low I was not a happy camper! You have to sit on the patio with your dogs which we thought would be perfect. Of course the wind had to pick up then and it started feeling the true temperature! Holy cow did we inhale our food so we could get up and move around ha.

After we ate we walked on the beach and let the girls run around. They didn't like that they had to stay on their leash. I searched dog beaches in the area but none came up :( I searched dog parks instead but again there were none in Pismo beach. We had to drive down the 5 to the next town to find a very small dog park. It was at least nice!

It was nice to get out of Lemoore for the day but I don't think I'd go back there. The area reminded me of a VERY small San Diego with the cliffs, and Pismo Beach itself reminded me of Pacific Beach where we used to live. So we weren't too impressed with it. And it wasn't as dog friendly as it seemed. Oh well, at least we had a good day.

Ello!

Well doing a "home" tour isn't going to work out. I still can't upload pictures from my phone to blogger :(

Our week has been filled with classes at the gym. I'm enjoying them of course :) the dogs are enjoying their daily walks through housing. Last night Frank and I took this class called M.K.P, we weren't too sure what it was. By the description it looked like a sports conditioning type class. Instead it was like turbokick on crack haha. The instructor mixed a lot of other stuff into it as well. It was fun, we got to jump on the bosu balls haha.

Right now we are sitting outside of Starbucks. For our walk today we walked over to Starbucks so we could get something to drink. I know everyone goes crazy over the red cups being in season... I go crazy over that cranberry torte/pie thing. Holy mother it's good! I have to have it once a year. And today was that day ha. Forgot to Instagram a picture though :/

What we've been up to

Well for starters I'm down in Lemoore with Frank now. My mom and I drove down last week then she flew back to Washington the following day. The dogs and I have been enjoying long walks all over base. The other day when Frank and I were walking the dogs we found the horse stables on base :)

Tomorrow is my first day to the gym here. Saturday was the only day I could have made a class but we decided to walk instead and we ended up doing over 5 miles. It's also the day we found the stables. I told Frank it may not be good that I'm walking distance to the gym.. I want to take all the classes haha.

Today we drove out to Hanford and did quite a bit of shopping. We are trying to buy a bunch of new clothing before we leave for Japan, since it will be cheaper here and we won't have any issues finding clothes that fit. Next pay check we'll head out to the mall in Visalia then after Frank finishes school in December we'll make a trip to San Francisco and stop by an outlet mall in Gilroy (lululemon!).

As of right now that's our excitement :) tomorrow I will do a tour of our temporary "home". Yes you don't want to miss that haha.
