Broiled salmon with creamy lemon sauce

So good! So good!

I've been wanting to update my binder of recipes for awhile now, but before I do I decided to go through and make everything in it. This way I can weed out the ones we don't really like or make notes to change things up on the recipes we like.

Tonight's meal was broiled salmon with creamy lemon sauce. If I remember correctly I got the recipe from fortheloveofcooking.com. It's been sitting in my binder for years never used until tonight. It was also nice that I got to pair it with salmon that I bought at the supermarket on my first grocery shopping trip out in town.

It turned out amazing! I'll have to cut the lemon sauce in half since it was more than we needed. I also did not use capers like the recipe calls for.

LEMON SALMON WITH CREAMY LEMON SAUCE
1 tablespoon olive oil
1 clove garlic, minced
1/4 cup lemon juice
2 tablespoons capers
1 teaspoon lemon-pepper seasoning
1/2 cup fat free sour cream
1 1/2 pounds salmon fillet

Preheat oven to 350 degrees. Coat baking sheet with cooking spray. Heat oil in a small saucepan over medium heat. Add garlic and cool for 1 minute. Reduce heat to low. Stir in lemon juice, capers, and lemon-pepper cook for 5 minutes. Add sour cream and cook for 5 minutes, or until heated through. Meanwhile, place the salmon on the prepared baking sheet. Bake for 20 minutes, or until fish is just opaque. Serve with sauce.

I paired ours with sautéed corn and green beans and roasted asparagus.

Now where's dessert!?
