Berry-spice smoothie

Remember how I said since we are using the free wifi that our connection is slow? Well this post took me three days! I was only able to load one picture a day. I will be doing lots of collages of the pictures I load from Frank's families visit.

As you can see I got this smoothie from Women's Health Magazine. The original smoothie is..

1 cup skim milk
1 cup blueberries
1/2 tsp cinnamon
3/4 cup ice

I wanted to do a smoothie but didn't have blueberries. I did have strawberries and a banana though!
My adaption..

1 cup vanilla almond milk
1 cup chopped strawberries
1 banana
1/2 heaping tsp cinnamon
3/4 cup ice

Creamy avocado veggie pasta

When we moved to our new place we chose not to get Internet since we were right next to one of the wifi hot spots at our complex. We love being able to save that little bit of money. Bad part is that it is SLOW! Updating the blog takes a lifetime it feels like. However, since I am a bigger fan of saving money I just need to get used to it.

Now onto this AMAZING recipe. This ended up being a fun meal to cook because Frank and I ended up making it together. Everything needed to be cooked for a certain amount of time and I was still chopping veggies. He manned the stove and did all the cooking and I chopped away.

I want more now.

Side note, I love those place mats! I got them at Target for a few bucks. Since they don't store well we just stack them in the center of the table when we're not using them and they look like a center piece... or can hold a center piece.

  • I've been back for almost a week now and every day has been busy for the most part.
  • We're getting ready for Frank's family! They come in on the 21st, his mom will be here a week in a half and his brother and his family will be here 2 weeks. Frank just now realized we will have a very full house!
  • We are now proud owners of a Kirby vacuum. So far loving it!
  • Afternoons like today make me wish I was doing more with my life (It was a boring/lazy afternoon.. and now night). Hopefully soon though!?
  • So happy to be back to juicing.. missed it so much.
  • You MUST try THIS recipe from Edible Perspective. So good :]
  • I am always happy to be back to our church after I've been gone for awhile. I heart THE ROCK!
  • We are so close to having our debt paid off! It is so close that I feel like everything is getting in our way to make it happen. Patient is something I need to focus on ;]

Cake cones

Not healthy but super good! I went over to visit my aunt today and she was trying out these cake cones for Easter. She had seen Tori Spelling on the view this morning and she was talking about how her kids love these and since my aunt was wanting a fun dessert for the kids at Easter she wanted to give these a try.

You make up a cake, any cake will work, and then let it cool. Once it's cool you break it up and mix in frosting. You can then either make balls and freeze them or you can stuff the cones with the cake mixture and freeze them. 30 minutes to an hour. If you freeze just cake balls then you would put them on the cones. Then if you have kids you can let them frost the cake cones and decorate with whatever you desire.

Fun to make and eat and a twist on cones. I want to come up with a much healthier version when I get back to San Diego.
